A mistake that worked out for the better

I have a breadmaker, it's a Sunbeam Quantum smartbake. It's used at least every other day to make bread...obviously ;-D I don't think we've bought a sliced loaf of bread from the supermarket since November of last year. And to be honest the thought of buying bread from the supermarket doesn't appeal anymore. It has no flavour, makes lousy toast and soggy sandwiches so why would you bother?
We've been pretty happy with the bread too, very occasionally we've had the odd duff loaf, we narrowed that down to a particular brand of dried yeast, so we changed it. That seemed to solve the problem for the most part, but sometimes the bread came out a little heavy or seemed soggy, but to be honest that was probably down to me.
Something else that was down to me was the switching off of said machine mid cycle last week! I shan't say what I said cos it's rude! But fear not, all was not lost. The dough was in it's third rising and ready to bake. So I plopped it on a baking tray and baked it in the oven.
'But how did it turn out?' I hear you yell........I shall tell you!
Bloody good in fact, so good that I think I shall get the machine to mix it and then put it in a loaf tin and bake in the oven from now on.
I use the pizza dough cycle and then put the dough into the baking tin for a 3rd rise then bake, piece of cake..............well bread!

  1. That is how I have been doing my bread for years now and you get the proper shaped loaf of bread.....and the hard part (kneading) is already done :0)

    I can't remember the last time I bought bread from the store. There is no comparison to homemade bread and the price - yikes!!!

  3. I'd read on DTE that was how many did theirs. I was pretty happy with how it was before, but now I know better! :D

    I still let the Bread machine do mine, but mainly because I like to wake up to freshly baked bread in the morning. I still get duds sometimes as well. No idea why.

  5. Worth trying this way Corrine, even if not all the time. I.m useless at slicing the bread and the breadmaker bread is quite tall, this way it's shallower so much easier for me to slice :D The crust is nicer too.

  7. Nice looking loaf there & so brown too.Im useless at slicing bread too,thats why I got one of those bread slicing guides..:)

  8. This sized is much easier to cut now. it also helps having a very good bread knife! :D
