In the kitchen today - Meatloaf

Meatloaf is one of the things I don't think I've ever made, I'm sure I've made similar dishes, but not meatloaf per se.

Thank you Sue for this recipe, I understand her hubby is the chef extraordinaire where meatloaf is concerned, well that's what Michael tells me.

Meat Loaf ingredients:
450-500gms mince
tube sausagemeat
finely chopped onion
garlic
1/2 pkt Maggi tomato soup (dried)
1/2 cup breadcrumbs
2 beaten eggs
Dash Worchestershire sauce
Method: Mix all the ingredients together and place in meatloaf tin. (Tip: Use your hands to mix, but have the meat at room temperature, my likkle dandies got cold!)
Glaze ingredients:
The other 1/2 pkt tomato soup
1/4 cup water
2 tbsp honey
Dash Worchester Sauce
1 tbsp brown sugar
Dash beef stock ( I used half an oxo cube)

Method:Put ingredients into a pan, mix well. Bring to boil and simmer for five minutes, stirring constantly.
Brush glaze over the meatloaf to cover then brush occasionally throughout cooking process. The glaze takes on a lovely sheen.
Cook in oven at 180C for about an hour.

Sue says:
"Damned fine with mashed spuds.

Should follow this with an upside down chocolate pudding, served with vanilla ice- cream!!
